BLINTZ LOAF

From: Nancy Polinsky, Squirrel Hill

Ingredients

1 lb cottage cheese
1 stick margarine or butter
3 eggs
3 TBS sugar
1/2 cup Bisquick

Procedure

Melt margarine (or butter) and mix with cheese in bowl with mixer until smooth. It takes a while. Slowly add Bisquick. Add sugar and then the eggs, one at a time. Pour into greased loaf pan. Bake 40 minutes at 350°. Serve with jam and or sour cream.
