CRANBERRY JELLO MOLD

Ingredients
1 – 3 oz pkg of raspberry flavored gelatin
¾ cup boiling water (or juice from crushed pineapple)
1 – 8 oz can crushed pineapple…drained
1 – 16 oz can Whole Berry Cranberry Sauce
1 red delicious apple…unpeeled and coarsely grated
1 TBS grated orange rind (the zest of the orange)
1/8 tsp salt
1/8 tsp ground cinnamon
Dash of ground cloves
Lettuce leaves
Garnish with fresh cranberries and orange rinds.
• Dissolve gelatin in boiling water.
• Let cool. (I usually put it into the freezer for about 10 minutes – just make sure it does not congeal. You just want it to not be hot or warm)
• Mix next 7 ingredients while gelatin is cooling.
• Once cooled, mix gelatin with mixture
• Pour into a lightly oiled 4 cup mold
• Cover and chill until firm
• Un-mold on lettuce leaves, garnish with fresh cranberries and orange rinds.
This is best made the day before. It is a beautiful holiday dish, Thanksgiving and Christmas. Goes well with turkey and pork!
